Methi Matar Malai | Punjabi style Fenugreek Green Peas, Cream Curry

Ingredients:

Fresh Fenugreek or Methi 1 and 1/2 Cup
Green Peas or Matar 1/2 Cup
Full Cream or Malai 1/2 Cup
Cashew nuts 8 Pieces
Cumin seeds or Jira 1/2 Tablespoon
Cardamom (Whole) 2 in Quantity
Fresh crushed coconut 1 Tablespoon
Crushed Cumin 1/2 Tablespoon
Chopped onion 1/2 Cup
Green chili 8 in Quantity
Oil 6 Tablespoon
Ghee 2 Tablespoon
Garlic Cloves 8 in Quantity medium size
Fresh Ginger 1 CM
Garam Masala 1 Teaspoon
Paneer butter masala 1 Teaspoon
Chopped Coriander (Optional) 3 Tablespoon
Sesame Seeds or til 2 Tablespoon
Salt As per test

Recipe: 
  1. Let's begin with the restaurant-style testy methi matar malai recipe. Take a pan and add 2 cups of water in it, with randomly chopped onion, cashew nuts, chopped fresh ginger, and garlic cloves.
  2. We need to cook it for about 5 min until the onion becomes transparent after that just need to strain the water and cook down our veggies. 
  3. We will grind the veggies with fresh chili and sesame seeds or til.
  4. We need to separate the leaves from the stalk of the fenugreek or methi bunch. We need one and 1/2 cup of fresh leaves and going to cook them in water for about 5 min. Test it after 5 min, if its bitterness is gone partially. If still it's bitter a little or you don't like the bitterness of methi, boil it for another 2 min.
  5. Likewise, we need to boil the green peas as well, until it becomes soft.
  6. We are going to strain the fenugreek as well and chop it in medium size.
  7. Let's begin with the main process, take a pan, and add oil and butter. Oil saves butter from burning, add cumin seeds or jira, cardamom, add the purey of veggies we grind, add garam masala, paneer butter masala, crushed cumin, fresh crushed coconut and cook it for about 2 min, keep stirring the mixture.
  8. Now it's time to add fenugreek or methi and green peas, mix it well and roast for a min. Add half cup of water, cream, salt as per test, and again mix it well. Our very delicious, methi matar malai is ready to serve. Serve it with plain naan or butter naan or roti or lachha paratha.

Tips:
1) If available we can also add some coconut milk as well, instead of water, it will increase its test.
2) If cashew nuts are not available, we can also use plain flour instead of that, basically, Cashew nuts thicken the gravy and add the rich texture as well. We can roast a spoon full of plain flour in 2 tablespoons of butter for a min and get the thickness from it. Need to add it in step- 7
