Aloo biryani | dum potato biryani | Potato Dum Biryani

 Cooking Time: 1 Hour (for 2 peoples)

Ingredients:

Rice 1 Cup
Baby Potato 4 to 5 in Quantity
Biryani Masala 1 and 1/2 Tablespoon
Mustard seeds 1/2 Tablespoon
Cumin Seeds 1/2 Tablespoon
Onion 3 in Quantity
Tomato 2 Medium in size or 1 big
Turmeric powder 1/4 Teaspoon
Cashew nuts  4 in Quantity
Ghee or butter 1 Tablespoon
Red Chili Powder 1/2 Tablespoon
Sesame Seeds or til 1/2 Tablespoon
Coriander powder 1 Tablespoon
Ginger Garlic paste 1 and a half Tablespoon
Bay leaf 1 and 1/2 leaf
Clove or laung 3 in Quantity
Black pepper 3 in Quantity
Green peas (Optional) 5 Tablespoons
Curd or yogurt 1/2 cup
Oil 5 Tablespoons
Salt As per test
Curry leaves (Optional) 6 Leaves
Chopped Coriander 3 Tablespoon
Min leaves or Pudina 4 to 5 Leaves
Saffron or Kesar (Optional) 4 to 5 Threads
Milk (Optional) 1/4 Cup

Recipe: 
  1. Wash the rice twice and soak it for 10 min. Now cook it in 4 times extra water. Add clove or laung, black pepper, bay leaf and some salt in water.  We need to cook the rice 75% only, further, we will cook it in a later stage. After cooking, strain the rice from water, but we need to keep the water as well, we are going to use it in a further stage.
  2. Peel off the potato's and sock it in water. Now we will be going to cut the onion in thin slices and we need to deep fry it, till it becomes golden brown, like mentioned in reference images. Now we are going to deep fry the potato, before that rub it with a dry cloth to remove the water from the outer side of it.
  3. We are going to marinate our potato for 10 min. Let's make a mixture for it, take a bowl and add curd or yogurt in it, half spoon red chilli powder, salt as per test, coriander powder, a tablespoon of fresh coriander, sesame seeds or til and give it a quick mix. 
  4. We need to add our baby potato in it, but before that just take a fork and make some holes in it, so that marinated mixture can go inside of it. Now add these potatoes in marinate mixture and leave it aside for 10 min.
  5. Take milk and add saffron or kesar in it, mix it well and keep it aside. 
  6. Now, finally, it's time for making layered biryani, take a pan or cooker, which have a thick base, so our biryani will not get burned. Add oil, mustard seeds, let them crackle, add cumin seeds, finely chopped tomato, green peas and a pinch of salt, mix it and cook it till tomato started leaving the oil.
  7. Add ginger-garlic paste, turmeric powder, biryani masala, curry leaves and fry them well. If you don't have that you make it by your self just check out the recipe of Vangibath.
  8. Now low down the flame and add the potato mixture in it. Keep it stirring till it leaving the oil.
  9. Now we need to add cashew nuts, prefer to break in 2 pieces, stir it for a min. Now add a half cup of water, which we kept aside from step one, mix it well and let it boil.
  10. Now move half of the mixture out from the pan, we are gonna add that after the first layer. Now spread half of the rice on top of this mixture in pan. Don't stir it, now spread some onion, which we deep-fried earlier, some fresh coriander and spread some finely chopped mint leaves.
  11. Now its time for the second layer, add the potato mixture, which we removed earlier. On top of it spread the rice, spread some onion, some fresh coriander and finally spread some finely chopped mint leaves. 
  12. On top of it add saffron milk. It's totally optional. Instead of that, you can add some water, which we kept aside from step one.
  13. Now the final step adds a spoon of ghee or butter on top of it for full rich flavour. Cover the biryani and keep some heavy thing on top of it, so the steam will not go outside. Cook it for 15 min on very low flame. And your biryani is ready to serve. 
  14. While serving it, cut a total portion of it from top to bottom. Enjoy it with Rayta or pickles.
Aloo Biryani

Tips:
1) On the last layer you can spread a pinch of food colour for making it look like the above image.
2) You can also add a pinch of sugar to add extra flavour in it and squeeze the lemon on top of it.
3) If you don't have thick bottom pan or cooker with you, just keep the pan on another pan and then cook it.
