Recipe:
- Let's make the very famous Gajar ka halwa, we need to clean carrots and grate it and we are ready to prepare it. Take a pan or cooker and add the same quantity of milk in it.
- Add Saffron or Kesar. We need to cook it till the milk gets evaporated. It will take around 15 to 20 min, its totally depend upon the thickness of your pan and flame we are keeping. Keep mixing it in between. If we are making it in the cooker, just cook it till 3 vessels. After that follow the same remaining process from the next step.
- Once the milk gets evaporated, add sugar and condensed milk in it. The mixture gets thin again, we need to keep mixing it till becomes thick again. (Before adding sugar make sure our carrots become soft enough cause after addition of sugar carrot stops melting, sugar starts absorbing water from carrot)
- Till that take another pan and add remaining 2 spoons of butter or ghee, heat it up and add dry fruits which we chopped in size as we like. We just want to roast it a little.
- Now add this dry fruits tadka, salt and cardamom or Elaichi powder in our halwa pan and mix it well.
- Cook it for a min, till our halwa gets thick as shown in the mixture and our halwa is ready to eat.
Tips:
We can also use khoya in this recipe instead of milk. In this case, we need to add a 3/4th cup of khoya. If we are using khoya directly we need to add it after carrot becomes soft by cooking it with water or some milk.
The basic ingredient in this recipe is carrot and as we all know its very good for our eyes. Other than that, it has some more interesting benefits to our body.
Carrots also contain fiber, so its benefits for weight loss and fiber intake can improve glucose metabolism in individuals with diabetes. One study claimed that carrot juice contributed to a 5% reduction in systolic blood pressure.
