Nankhatai | Nankhatai the Indian Traditional biscuit

Ingredients:
Item Quantity
Plain flour or Maida or Wheat flour 1 Cup
Semolina or Suji (Optional) 1 Tablespoons
Powdered Sugar 1 Cup
Butter or ghee or oil 1/2 cup and 2 Tablespoon
Cardamom Powder 1 Tablespoon
Salt 1 Pinch
Mix dry fruit's (Optional) For garnish On top

Recipe: 
  1. Let's begin with the process of this wonderful Indian traditional biscuit. First, we are going to mix all the dry ingredients. Our pictures are showing brown and yellow shade as we are using wheat flour in it.
  2. First, we need to sift plain flour or wheat flour and powdered sugar in a mixing bowl.
  3. We will add the cardamom powder and salt as well, and mix these dry ingredients very well. We are not going to add any kind of soda or egg in this recipe. 
  4. Now we are going to add butter or ghee in it, which is at normal temperature. We just need to add ghee 2 tablespoons at a time. Mix it well and again 2 tablespoons. 
  5. Try to mix this mixture by using hand, cause the body temperature will automatically melt the butter or ghee and will help to make a dough.
  6. In the end, you have the dough ready by which you can make a ball.  This means all the ingredients come together and can hold the shape, very similar shown in the picture.
  7. Now make a similar portion from out of the dough as the size of a lemon and shape it like a cookie. Simple roll it like a ball and press it gently. We are going to stick some dry fruits on top of it.
  8. We can bake these cookies in the oven or in an Idli cooker for 18 to 20 min. And our Nankhatai are ready to serve. We can have it with tea as well.

Tips:
We can add some custard powder for flavor, or we can add some milk powder for a smooth texture. 

This traditional cookie contains around 150 calories in a single cookie. But, it's healthy as well cause, we can make them from whole wheat flour also.

These cookies are quite simple to make and delicious also. We can try these eggless cookies at our home without any oven or OTG. 

Nankhatai is shortbread biscuits, originating from the Indian subcontinent, popular in Northern India. The word Nankhatai is derived from the Persian word Naan meaning bread and "Khatai" from a Dari Persian word meaning Biscuit. 

These biscuits remain as it is for a month, so while going for a trip we can carry this as dessert. Indian people love to have tea at least twice a day. In some regions of India people used to eat this with deep it in tea.

Nowadays its a bakery item and available in various flavors, like chocolate, vanilla, strawberry, or cream in between, and it's in various shapes also. In any Indian bakery, we can get these easily.

As wheat flour is a good source of iron, thiamine, niacin, calcium, and vitamin B6, in addition to the above nutrients, these Nankatai will became a good source of healthy food.
