Kozhukkatta recipe | Popular South Indian dumpling Kozhukatta

Ingredients:

Recipe: 
  1. Let's begin with Kerala's most favorite dessert dish Kozhukkatta. We will be going to make the dough first and then stuffing. For making dough place 2 cups of water to boil, add salt in it, as per test.
  2. Take a mixing bowl and add rice flour in it with a tablespoon of butter or ghee. Now add the boiling water in it gradually. While adding water in flour mix it with a spoon continuously. 
  3. Our flour get puffed up, we need a dough from it, keep mixing water in it. Whole 2 cups of water will go in it, as per our ratio. Now keep it aside to cool down a little.
  4. Till that let's make the stuffing, in a pan add coconut and jaggery powder, keep it on medium flame, mix it well and keep mixing it, we don't want to burn it.
  5. Add 2 tablespoons of ghee in it, as jaggery becomes liquid, and our mixture becomes soft and thick we can turn off the flame. It will take around 3 to 4 min. Add cardamom or Elaichi powder in it, mix it well, and stuffing is ready.
  6. Let's get back to the dough, now knead it well for about 2 min. If our dough becomes tight, we can add more water during kneading it.
  7. Apply some water on the palm and take a portion of dough to make a ball from it, press it in between of palm, and start pressing in the middle of the dough by both of your thumbs. As we can see in the reference image. 
  8. Make a little bowl from it and fill the coconut stuffing in it and close the edges and roll it a little to make a smooth ball. Make the same with the remaining dough as well.
  9. Now we need to give stem to it, so we can use the steamer or any kind of Idli cooker to steam them, make sure we are greasing some ghee at the bottom of the steamer plate, so the Kozhukkatta will not stick to the bottom.
  10. Steam it on a medium flame for 5 min. And our Kozhukkatta is ready to serve.😋

Tips:
We can also add some dry fruits to the stuffing. It will increase its richness.
