Dhokla is good for health, as it contains gram flour, which is the finest source of potassium, zero cholesterol, iron, Vitamin B-6 and magnesium. This makes Besan or gram flour a great choice for a healthy diet.

Ginger paste | 1 Teaspoon |
Green chili | 3 to 4 in Quantity |
Eno fruit salt | 1 Tablespoon |
Oil | 2 Tablespoons |
Recipe:
- We are going to make nylon dhokla. Let's begin with mixing all ingredients. Take a mixing bowl and add gram flour or Besan, curd, semolina or Suji, ginger paste, sugar, a spoon full of lemon juice and salt.
- Mix these ingredients well and pour the water gradually, so there will be no lumps in it. We need the batter in flowing consistency not so thick not so thin. If you like the spicy version of it, you can add some chili powder inside it.
- Take a tin and grease it with oil, it could be any tin, cake tin will also work.
- Heat up the pot with some water in it (around 2 cups), in which we are going to put the tin. In a pot just add one stand or plate to prevent the connection of water and dhokla. Basically, we are going to give steam to dhokla. We can make in cooker also, by just removing its vessel and also we can use the same tin's we get inside cooker.
- Now, just get back to the batter, we just need to be quick in this step. We are going to add the fruit salt, and 2 tablespoons of water in it and mix it well and transfer it into the tin.
- Put the tin inside the pot or steamer or cooker, in which we kept water for boiling already and cover it. We need to put something heavy on the top of the cover (if we are not using cooker). We just need to make sure, not lot more steam will get out.
- We need to cook it for about 15 min on medium flame.
- Let's make Tadka till that. Heat up the Tadka pan or pan, add oil in it. Add mustard seeds, let them crackle, turn off the flame, add cumin seeds, chopped green chili, sesame seeds or Til, curry leaves and then add 1/3 cup of water. Add a spoon of lemon juice and sugar along with a pinch of salt in it.
- Hope the dhokla is also ready, check it with putting toothpick inside. Now on top of it, spread the Tadka equally by spoon.
- Sprinkle some coconut, cut it and enjoy the Naylon Khaman Dhokla.
Tips:
1) After adding fruit salt don't wait too much, just follow the process, we need to transfer it quickly in tin and tin in cooker. If it stays so long after adding it, dhokla will not give us that much sponginess and become flat.
2) Add some Asafetida or Hing in Tadka, it will test nice and prevent health issues caused by gram flour. Some time by adding turmeric powder in dhokla, it terns in the red, cause of reaction that's why we don't prefer to add it.3) You can try it in Idli pot also, it will also give the same result.
This very soft and spongy Khaman Naylon dhokla contains 250 calories. Its very testy Gujrati recipe and got spread all over India. Indian people love dhokla a lot.
In some region, it will get served with some Sev, green chutney or tamarind water, with some deep-fried green chili, which is fully coated by salt.

Region-wise recipes of dhokla also got changed. In Maharashtra many regions they used to prepare it by adding the same quantity of Suji and gram flour soaking in curd for about 2 hours. In Gujarat, it is made with a fermented batter derived from rice and split chickpeas. It is the instant version of the same.
