Pav Bhaji | Mumbai Street Style Pav Bhaji | Easy recipe of pav bhaji

Ingredients:

Green peas 1 cup
Onion 2 In Quantity
Tomato 2 In Quantity
Carrot 1 In Quantity
Beetroot (Optional) 1/2 In Quantity
Capsicum 2 In Quantity
Pav Bhaji masala 1 and 1/2 Tablespoon
Hing or Asafoetida 1 Teaspoon
Green chilli (Optional) 2 in Quantity
Ginger Garlic paste 1 and 1/2 Tablespoon
Chopped Coriander 3 Tablespoons
Mustard seeds 1/2 Tablespoon
Cumin seeds 1/2 Tablespoon
Turmeric powder 1/2 Tablespoon
Red Chilly powder 1 Teaspoon
Curry leaves 7 to 8 Leaves
Lemon juice 1 Teaspoon
Salt As per test
Oil or ghee 4 Tablespoons
Butter 1 Tablespoon
Pav or any kind of salted bun 16 in Quantity

Recipe: 
  1. Let's begin with making the delicious bhaji or curry of pav bhaji. First, peel off the potato, and wash other veggies also. Cause, we are going to use the water remaining after this cooking. We need to cook potato, green peas, carrot, beetroot in cooker till it gets totally cooked. 
  2. Finely chop the onion, capsicum, green chilli and tomato. 
  3. Take a pan and add oil in it, after heating it up, add the mustard seeds, let them crackle, add cumin seeds, chopped onion, chilli, curry leaves and capsicum.
  4. Fry it till onion get a little brown. Add tomato, stir it till tomato becomes soft.
  5. Add pav bhaji masala, turmeric powder, red chilly powder, hing or asafoetida, ginger garlic paste and mix it well. Fry it for a min, we are not making it brown, but we need to cook them as well.
  6. Now, its time to add the cooked ingredients, add potato, green peas, carrot and beetroot. Mix it well and smash them in the pan itself, by the smasher or the spoon, whatever is available.
  7. We use the beetroot here only for the best colour, we can totally skip it or else we can add some red food colour also. Now add the water from the cooker, we need a cup of water here.
  8. As per the thickness you can add more or less. Add salt and fresh chopped coriander and lemon juice. This curry should be in flowing consistency.
  9. Heat up the pan and add half spoon of butter and roast the pav from both of the sides. Cut the pav in between, before toasting it and add some butter inside also. Woohooo pav bhaji is ready to eat. Serve it with some chopped onion, lemon and main butter on top of bhaji.

Tips:
1) Add a pinch of red chilli powder and a spoon of bhaji in butter, while roasting a pav will give you the exact street-side test, try it once.
2) Shortcut will be - add the tomato, potato and green peas at a time in the cooker. Make the masala till step:3, add the cooked ingredients and you are done, no need of capsicum and carrot.
