Stuffed Brinjal | Bharli Vangi | Traditional Maharashtrian Stuffed Brinjal

Ingredients: for 4 peoples

Brinjal small or Baingan  4 to 5 In quantity
Chopped Dry coconut 2 Tablespoon
Ginger 1 CM
Onion 1 big in quantity
Garlic cloves 9 to 10 medium
Turmeric powder 1/2 Teaspoon
Cumin seeds or Jira 1/2 Tablespoon
Mustard seeds 1/2 Tablespoon
Kanda Lasun mix Masala 1 Tablespoon
Chopped Coriander 2 Tablespoons
Sesame Seeds or Til (Optional)  1/2 Tablespoon
Roasted peanuts 4 Tablespoon
Oil 4 Tablespoons
Hing or Asafetida 1 Teaspoon
Salt As per test

Recipe: 
  1. We are going make authentic Maharashtrian style Bharli Vangi. We need finely chopped onion, in that we are going to add masala directly.
  2. In a grinding jar, add sesame seeds or Til, garlic cloves, ginger, chopped dry coconut, and grind it as a fine paste. If we don't have roasted peanuts powder, we can grind roasted peeled off peanuts in the same jar, along with others.
  3. Now, we need to make cuts in brinjal like shown in the referral image. 2 cuts which make the 4 same part of brinjal. We are not directly cutting out the brinjal, we are just making parts from it.
  4. Let's make the stuffing of brinjal, in finely chopped onion, add the grinding mixture along with the Hing or asafetida, Kanda Lasun mix Masala, roasted peanuts powder, turmeric powder and salt as per test.
  5. Now mix this stiffing very well and fill this into the brinjal like shown in referral image.
  6. Stuffing is remaining after filling all the brinjal, which we are going to use later. Now just heat up the oil and add mustard seeds, let them crackle, add cumin seeds and all those stuffed brinjals. Now cover it for a min.
  7. We need to rotate every brinjal after a min and cook it likewise. After brinjal is half cooked, from all sides, we are going to add the remaining masala along with sprinkle some water on it. So it will not get burned.
  8. After its done from all sides just check with a knife once, for your confirmation, that is cooked perfectly. Our Bharli Vangi is ready to serve. Preferred to eat this with Chapati, any kind of flat bread or Bhakri.

Tips:
1) Instead of Kanda Lasun masala, we can also use red chili powder along with Garam masala, but Kanda Lasun Masala gives us the best result.
2) If we want some innovation we can also add some Sambar masala in it.

This is a very famous Maharashtrian Bhaji and almost all people love to eat this. There are different recipes in a different region of Bharli Vangi.

One of the interesting fact about this Bhaji is on most occasions like a festival, pooja, or guests are arriving, this Bhaji is the most perfect and the most preferred. Nowadays, this Bhaji getting served in marriage as well.

This recipe totally depends on the Masala we used. In India, we can get so many types of brinjal, this recipe is made from the small, rounded shape brinjal, which we can get easily from any vegetable shop. 

No matter of what color brinjal is, either purple or green, this recipe is always the star and gives you mouthwatering and unforgettable test only.
