Lauki Kofta curry easy recipe | bottle gourd Kofta curry | Dudhi Kofta Curry

Ingredients: for 4 peoples

Grated Bottle gourd or Lauki or Dudhi  1/2 Cup
Gram flour or Besan 1 Cup
Green peas (Optional) 3 Tablespoons 
Turmeric powder 1/2 Tablespoon
Cashew nuts 5 In quantity
Crushed Cumin 1/2 Tablespoon
Cumin seeds or Jira 1/2 Tablespoon
Mustard seeds 1/2 Tablespoon
Green chilli 2 In quantity
Chopped Coriander 2 Tablespoons
Kanda lasun masala or garam masala (Preferred to have it) 2 Tablespoons
Chilly Powder  1 Teaspoon
Oil 5 Tablespoons and also for deep fry
Tomato 2 In quantity
Garlic cloves 9 to 10 medium size
Black pepper Powder 1/2 Teaspoon
Baking soda a pinch
Sesame Seeds or til 1 Tablespoon
Onion  2 In quantity
Full cream or yogurt  2 Tablespoons
Lemon juice 1 Tablespoon
Curry leaves 7 to 8 leaves
Salt As per test

Recipe: 
  1. While grating the bottle gourd or lauki, peeled it off and try to remove the middle spongy potion, which contains some seeds.
  2. We need to make kofta of bottle gourd or lauki or dudhi. Let's get started with it. Take a bowl, add grated lauki in it, add a cup of gram flour, salt as per test, chopped green chilli, half of the chopped coriander, sesame seeds or til, baking soda one pinch and some chilly powder, it's optional, if you need it less spicy just forget about it..
  3. Mix it well, it's fine if it has a little flowing consistency, bottle gourd has lots of water in it. Take a pan and heat up the oil to deep fry the kofta in it. Take a batter in a spoon or make balls from it and deep fry it till becomes golden from all the sides.
  4. Yoooo... these kofta's are also very testy, 😋 test it. Now we are going to make some gravy for this kofta. Take a pan, add big slices of tomato, normally 4 cuts from 1 medium size of the tomato, same thickness or randomly chopped onion, garlic cloves, cashew nuts and add some water in it, which cover all of them, boil it about 5 to 7 min. Till onion gets transparent. 
  5. Now remove it from water and grind it well. You can wait till mixture will get cold before grinding it. 
  6. Finally, let's make gravy, take a pan heat it up and add some oil in it. Heat up the oil and then add some mustard seeds, let them crackle, 💥 now add some cumin seeds or jira, let them make some noise, add the paste, which we grind earlier, add some curry leaves and green peas.
  7. Now we need to fry it, till it leaves oil and this step will take around 5 min. Now add some salt, black pepper powder, kanda lasun mix masala or garam masala, chopped coriander, crushed cumin, turmeric powder, lemon juice and full cream or yogurt. 
  8. Fry it for a min and now add 2 cups of water. Give it a quick mix and add koft's in, let it boil for a min. Now your kofta curry is ready to serve. Basically, kofta drinks lots of water from gravy, that's why its better have it hot enough. Otherwise, we need to add some extra water cause it becomes dry after cool down completely.

You can add any kind of paneer masala if you have it. It will test wonderful with Kofta curry.
